Why there is no age table on this page
Every directory publishes one, and every one of them is partly wrong. Three separate authorities set the age you meet at the door, only the first is a single public document, and the third can change its mind between your search and your drive.
The state legislature
Sets the floor for the casinos a state licenses itself. It is one public document per state, it changes rarely, and it is the only one of the three a directory could keep current without help.
The tribal-state compact
Governs casinos on tribal land, and there is one per tribe rather than one per state. Two properties an hour apart in the same state can be operating under different compacts with different minimums.
The property itself
Raises its own age whenever it wants to, and almost always does the moment it serves alcohol where the games are. It announces the change on its own website and nowhere else.

Why the property has the last word
Two forces push a floor from 18 to 21. The first is alcohol: in most states a licence to serve drinks where gambling happens comes with a 21 door, and a resort would rather run one age for the whole building than police a line through the middle of it. The second is the compact or licence a tribal operator holds, which can set its own minimum above the state's.
Both of those are decisions a business makes, which is the part a table cannot hold. A floor that admitted 18-year-olds for a decade becomes a 21 floor the week a bar opens on it, and nothing about the state, the compact or the building changes to announce it. The same works in reverse: a card room that drops table service can lower its own door again. This is why the pages on this site that carry a list carry hours and locations — the fields that change slowly enough to be worth publishing — and send the age question to the operator.
The practical consequence is that two casinos an hour apart in the same state can have different doors, and that a state's headline age tells you what to expect rather than what you will meet. Where 18 does turn up, it turns up most often on a floor with no bar service on it: a card room, a bingo hall, or a tribal property whose licensed rooms are kept separate from the games.
One building can run several ages at once
"Can I get in at 18" and "can I play at 18" are different questions, and at a large resort they often have different answers. The restriction is usually on the gaming floor rather than on the building, so the hotel, the restaurants, the theatre and the pool can be open to you while the floor between them is not. Some properties let under-age guests cross the floor on a marked route to reach the rest; others will not let them stop on it at all, and a member of staff will say so within a few steps.
The activities split too.
